So, apparently, if you use too much rice making gumbo, you get a sort of... gelatinous gumbo cassarole. Still tasty, but blander than expected, and very very filling.
Yep! Creole gumbo usually has shellfish, and Cajun gumbo can have seafood or fowl, with either having sausage or ham added, but you can make kosher gumbo and even vegetarian gumbo! As long as it has okra, which is what "gumbo" means, you're on the right track.
