Spock plays the Vulcan harp/lute/lyrette (TOS: "Charlie X", "The Conscience of the King", "Amok Time", "The Way to Eden"; Star Trek V: The Final Frontier) and the piano (TOS: "Requiem for Methuselah"). The Platonians forced him to play the kithara and sing (TOS: "Plato's Stepchildren").
McCoy plays the banjo (TOS: "This Side of Paradise").
Scotty plays the bagpipes (seen in his quarters in TOS: "By Any Other Name"; actually played in Star Trek II: The Wrath of Khan).
Uhura sings (TOS: "Charlie X", "The Conscience of the King", "The Changeling"), hums (TAS: "Once Upon a Planet"), and dances (TOS: "Charlie X", Star Trek V: The Final Frontier). Scenes of her playing the Vulcan harp were cut and are therefore noncanonical. She didn't know how to play the harpsichord except when given the ability by Trelane (TOS: "The Squire of Gothos").
Picard learned to play the (Ressikan) flute (TNG: "The Inner Light", "Lessons", "A Fistful of Datas", Star Trek Nemesis).
Riker plays trombone (TNG: "11001001", "Second Chances", "Future Imperfect", "The Next Phase", "Second Chances", "Thine Own Self") and the piano (TNG: "Unification II"). (Fun fact! It was actually Jonathan Frakes playing the trombone every time we saw Riker play.)
Deanna Troi may or may not play the piano; we see her sitting at one in TNG: "Masterpiece Society".
Data plays the violin (TNG: "In Theory", "Inheritance", "Elementary, Dear Data", "The Ensigns of Command", "Sarek", "Tin Man", Star Trek: Insurrection), classical guitar (TNG: "Silicon Avatar"), and the oboe (TNG: "In Theory"). He also sings (TNG: "In Theory", Star Trek Nemesis).
Worf collects and sings Klingon Opera (TNG: "Unification II"; DS9: "Looking for par'Mach in All the Wrong Places", "In the Cards", "In Purgatory's Shadow", "Penumbra").
Benjamin Sisko plays the piano (DS9: "Image in the Sand", "Shadows and Symbols").
Miles O'Brian plays the cello (TNG: "The Ensigns of Command", "Lessons"; DSP: "Shadowplay"). In fact, he was accepted into the Aldebaran Music Academy but didn't want to go (his father had sent the application), so the day before he was supposed to leave he enlisted in Starfleet instead.
Keiko O'Brian (née Ishikawa) plays the clarinet (TNG: "In Theory").
